Strawberry Cake Mix Cookies are where it’s at.

These are PERFECT for a fun Valentine’s Day activity for your kids or heck, I made these for a little Valentine’s Day treat to myself, because I was CRAVING the chocolate strawberry flavor combo.

Cake mix cookies made with strawberry cake mix, strawberry jello, butter, eggs, and your choice of chocolate chips (dark, milk, white – you name it, it’s delish).

Ingredients in strawberry cake mix cookies:

  • Strawberry cake mix
  • Strawberry jello mix
  • Butter
  • Eggs
  • Chocolate chips: white, dark, or milk chocolate

How to makestrawberry cake mix cookieswith milk, dark, or white chocolate chips:

  1. Preheat oven to 350 degrees F and line two rimmed baking sheets with silicone baking mats or parchment paper.
  2. In a large bowl, add in cake mix, jello mix, butter, eggs, and chocolate chips of choice.
  3. Mix together using a hand mixer.
  4. Use a large cookie scoop to scoop 8 cookies (this recipe makes 16 cookies total) onto each prepared baking sheet, leaving room for the cookies to spread.
  5. Bake in preheated oven for 15 minutes.
  6. Remove from oven, cool for 2 minutes on baking sheet, then remove cookies and place onto a wire baking rack to continue cooling.

These strawberry cake mix cookies are perfectly strawberry flavored with lightly crispy edges and super chewy centers.

Now. What chocolate should you use?

Trevor and I both LOVED the white chocolate, which was surprising, because neither of us would typically choose white chocolate over dark or milk.

We felt that the dark chocolate kind of overpowered the strawberry flavor, while the white chocolate complimented it a little better.

That being said, if you’re a dark or milk chocolate lover, it’s absolutely still a delicious choice.

  • 1 (15.25 oz) box strawberry cake mix
  • 1 (3 oz) box strawberry jello mix
  • 1/2 cup butter melted
  • 2 large eggs room temperature
  • 1/2 - 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F and line two rimmed baking sheets with silicone baking mats or parchment paper.

  • Mix together, until well combined, using a hand mixer.

  • Bake in preheated oven for 15 minutes.They may not look quite done, but they continue cooking and firm up as they cool.

  • Remove from oven, cool for 2 minutes on baking sheet, then remove cookies and place onto a wire baking rack to continue cooling.

Notes

I’ve tried white, dark, and milk chocolate. We like white chocolate the best, using 1 cup of the white chocolate. Use white chocolate for a more pronounced strawberry flavor.

In second place, we liked 1/2 cup dark/milk chocolate. The dark/milk chocolate is more overpowering of the strawberry flavor.

Feel free to ditch the chocolate chips completely and drizzle with melted chocolate after baking instead.
