masala khichdi recipe | vegetable khichdi | moong dal masala khichdi with step by step photo and video recipe. khichdi recipe has always been india’s superfood or queen of all foods and perhaps the most common food in every indian household. being so common adds versatility and variation to this delicacy which changes with each region. masala khichdi recipe or vegetable khichdi is one such recipe which has a strong connection to pulav or pulao recipes.
perhaps the recipe name portrays it as complex khichdi recipe, but to the contrary, it is extremely simple to prepare. the entire recipe steps are completed within one single pressure cooker which not only simplifies the steps but also hastens it. in addition, i have prepared masala khichdi recipe very similar to pulao or pilaf recipe with dry spices and vegetables. but one can certainly play with their creativity and easily extend this vegetable khichdi recipe with choice of vegetables for sure. also with the spices, i have added dry spices like cardamom, cinnamon, pepper and cloves on top of spice powders which makes it flavorful and lip-smacking.
some easy tips, recommendations and serving suggestions for this spicy masala khichdi recipe. firstly, in this recipe, i have used sona masuri rice or perhaps any daily consumable rice can be used. but i would not recommend using basmati or any long grain rice which cannot be mashed easily. secondly, all the dry spices added to this moong dal masala khichdi contains a lot of heat and hence check your red chilli powder/green chillies while adding it. lastly, if you are serving the khichdi once it is cooled, make sure to add water to have a watery consistency. basically, as time passes, khichdi attains a thick consistency due to the moong dal and the spice taste may get concentrated.

Ingredients
- 1 tbsp ghee / clarified butter
- 1 bay leaf / tej patta
- 2 pods cardamom / elachi
- 1 inch cinnamon / dalchini
- 3 clove / lavang
- 1 tsp cumin / jeera
- pinch of hing / asafoetida
- 1 onion, finely chopped
- 1 slit green chilli
- 2 tbsp peas / matar
- 1 tsp ginger garlic paste
- 1 to mato, finely chopped
- ¼ carrot, chopped
- 2 tbsp capsicum, chopped
- ¼ tsp turmeric / haldi
- ½ tsp kashmiri red chilli powder / lal mirch powder
- 2 tbsp coriander leaves, finely chopped
- ½ tsp garam masala
- 1 tsp salt
- ½ cup rice, washed
- ½ cup moong dal, washed
- 3¼ cup water
Instructions
firstly, in a pressure cooker heat 1 tbsp ghee and saute 1 bay leaf, 2 pods cardamom, 1-inch cinnamon, 3 cloves, 1 tsp cumin and a pinch of hing.
continue to saute 1 onion followed by 1 slit green chilli and 1 tsp ginger garlic paste.
also, saute 1 tomato till they turn soft and mushy.
add vegetables like 2 tbsp peas, ¼ carrot and 2 tbsp capsicum. saute for a minute.
now add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and 1 tsp salt. saute on low flame.
furthermore, add ½ cup rice and ½ cup moong dal. saute for a minute on low flame.
now pour 3¼ cup water and 2 tbsp coriander leaves. mix well.
cover and pressure cook for 5 whistles on medium flame.
finally, serve masala khichdi with curd and pickle.
