"A delicious conglomerate of beef and vegetables in a rich tomato soup. I made this regularly when my kids were growing up. We ate a lot of ground beef because it was economical. This was an invention of mine while looking for another way to cook hamburger. I served it with cornbread or crackers. It was great!"

ingredients
- 1 1⁄2 lbs 80% lean ground beef
- 1 large onion, chopped fine
- 1⁄2 teaspoon garlic powder
- 1 tablespoon parsley flakes
- 1 stalk celery, chopped fine
- 1⁄2 bell pepper, chopped fine
- 2 (15 ounce) cans diced tomatoes with juice
- 2 (15 ounce) cans tomato sauce
- 2 teaspoons salt (add more to taste)
- 1 teaspoon pepper
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can green beans, drained
- 1 (15 ounce) can sliced carrots, drained
- 1 (15 ounce) can green peas, drained
- 2 large white potatoes, diced
- 3 beef bouillon cubes
- 4 cups water

directions
- In large skillet, brown ground beef with onion, garlic, bell pepper, parsley and celery. Do not drain.
- Pour into a very large pot.
- Add beef bullion cubes and 4 cups water. Bring to a boil.
- Add diced tomatoes, tomato sauce, salt and pepper, and all vegetables.
- Bring to a boil, reduce heat and simmer until potatoes are done.
- Serve with cornbread or crackers.

My Husband and I really enjoyed this recipe. It was easy to put together and absolutely delicious! I omitted the celery and green pepper and used 2 cans of mixed vegetables instead of the individual vegetables. And I only used 1 teaspoon salt instead of 2. It was very good and I will be making it again many times. Thank you for the recipe !!

I used about 1 lb. of hamburger and 1/2 lb. of sausage I had leftover. I used frozen vegetables instead of canned and added a little seasoned salt. I also skipped the potatoes but added a can of pinto beans. I added a little celery seed and skipped the celery because no one in the house likes to eat it much and I hate to buy celery for one stalk! This soup was very yummy! I have got plenty in the freezer now for future dinners. Thank you for sharing!

This recipe took me right back to my childhood. My mom used to make a soup very similar to this, and the basic flavor of this is right on the money. I did make a few changes...No celery, since DH doesn't like it, though I did add in a pinch of celery seed. Also, I used beef stock in place of the tomato sauce and bullion cubes, and added a can of tomato paste to intensify the tomato flavor. Finally, I used frozen vegetables rather than canned. Really tasty, economical, and nutritious comfort food that hubby & I really enjoy. Thanks so much for bringing back this fond memory!

This is a good recipe that makes a lot of soup. I have a family of 6 and we have plenty of leftovers for another meal(and then some probably). I did use fresh garlic, crushed while browning the meat. I omitted the green pepper and added in sliced cabbage. I also served this over some leftover macaroni noodles and omitted the potato because of this. To make this even more economical, I only used 1/2 lb. of ground beef and no one in my family complained. Thanks for sharing this one, it is definitely a food budget stretcher! =-)

I love to cook. I love to browse through old recipe books. Especially from the "South".I am currently gathering old recipes to put in a cook book I am making for family and friends.
