Mmmm hot carob! Have you tried it? If not, you might be surprised to know that it is a creamy, dreamy sweet drink-- like cocoa, but creamier and without the bitterness. And without caffeine. And without theobromine. And, as I discovered, it helps to settle a wonky tummy (otherwise known as 'diarrhea'). Without creating the reverse 'issues' (i.e., constipation). Or, that is what it did in this household. I am not a medical practitioner, just someone looking for a possible help for a problem and finding many indications that a hot carob drink can 'do the trick'. I have baked with carob powder (muffins, cakes, cookies, bliss balls) and carob chips, but hadn't checked out the hot drink. I like it better than cocoa (hot chocolate). COMBINE:

*2 C. cooked Garbanzo beans

*1/2 Green Pepper, chopped

*1/2 C. Slivered Carrots

*1/2 C. Green Onions, chopped

*1/2 C. Celery, chopped

*1/4 C. Parsley, chopped fine

OPTIONAL: 2 cloves Garlic, minced

FOR DRESSING, WHIZ IN BLENDER:

*2 T. Olive Oil
*Pinch of Salt
*1 tsp. Honey
*2 T. Lemon or Lime Juice

Pineapple Sweet and Sour Sauce This wonderful Sweet and Sour Pineapple sauce recipe from Elder Shirley Gong at the Port Alberni Adventist Church does not have some of the less attractive ingredients of commercial sauces (for example, no food coloring). Use it as a sauce alternative for the Veggies and Pan Noodles , also a recipe of Shirley's. INGREDIENTS Makes 6 Servings 1/2 C. Brown Sugar (or Coconut Palm Sugar) 11 T. Corn Starch 1 can Pineapple Chunks in Juice 1/3 C. Vinegar or Lemon Juice 1 T. Soy Sauce 1 small chopped Green Pepper METHOD: Mix Sugar and Starch together Add all ingredients to a medium saucepan, EXCEPT the pepper Heat slowly to a boil, stirring frequently. Wish you could have been there! INGREDIENTS 2 C. cooked Lentils (Beluga or green lentils work well) 1 C. finely-ground Pecans 1 3/4 C. Delicious Vegan "Pumpkin Cheesecake" This "Pumpkin cheesecake" is another one of the recipes that was demonstrated at the Healthy Choices cooking class by Dr. Darlene Blaney, PhD Nutritionist, on March 29th at our Church. It's baked in a casserole dish or a spring-form pan, maybe the reason for calling it a "cheesecake", but to me it tasted like the perfect Pumpkin Pie! For the Crust: 1 1/2 cups/150 g Graham Cracker crumbs (or GF cookie crumbs) 1 cup/120 g Raw Walnuts, ground fine 1/3 cup/72 g Grape Seed Oil 1 tablespoon/14.8 ml. Quick Mexican Tortilla Casserole with Cheeze Sauce This is another one of Dr. Darlene Blaney's fab vegan recipes from the Healthy Choices Cooking Demo that was held at our Comox Valley Adventist Church on the weekend of March 27-29, 2015. Mary Lou Johnson is our Church's star dessert-maker. Here is the picture of a torn-apart Apple Duff she made for a recent Fellowship Dinner... yes, it was delicious!
